I think you need to be clear that i-mode is simply the name of the portal that DoCoMo subscribers use to access content. It is carried on a wireless network called a PDC-P(PDC packet), which DoCoMo calls 'DoPa', and uses a transport protocol called the light transport protocol until it gets into a DCM gateway, which then connects to an IP network, and there are industrial devices used in vending machines which use this network to communicate using TCP/IP. These devices are not particularly expensive. There are also Foma data cards, as well as DoPa data cards, though of course <shameless_plug>Vodafone's new 3G datacard is in every way preferable</shameless_plug>.
Just don't think about 'i-mode', because it won't help unless you are asking how to send mail that *looks like* it is from an i-mode phone, but is actually sent from a computer. The only reason I can think someone would want to do that is for spamming, so I don't think I can help you unless you can explain what you would like to do.
