I have heard and read a lot about DoOnGo who provide facilities for =
managing these kind of 'in-the-field' upgrades of handsets. Does anyone =
know if this 'service pack' is using the DoOnGo technology?=20

Plus the broader question of if the firmware in a phone is capable of =
being up-graded are there unscrupulous users out there trying to reverse =
engineer their phone's firmware?

It is not exactly a recall, where in users had to be
given a new handset earlier.
Users with the SH505i would have to go to the Docomo=20
shops and get the software update (something like a=20
service pack).
